Ok, YUM!! Enough said!!
I am (usually) super healthy and so sweets are hard, because let's face it, we all have a sweet tooth, and sweets don't give us abs. Sweets are even more difficult for me as I am dairy free, meaning I consume no dairy products at all. This sounds crazy I know, but it's actually by choice, even more nuts.
I am always searching for creative ways to fill my sweet void and here is my latest creation: Vegan Homemade Ice Cream! It's also super easy to make.
Ingredients:
Almond Milk (original) or Full Fat Coconut Milk
Fruit ( I used a really ripe peach)
Raw Sugar
Steps to create this amazing goodness:
1. I used a coffee mug, gives you just the right size serving.
2. Cut up your ripe fruit into small chunks or cubes, put into your mug.
3. Add in desired amount of almond/coconut milk into mug and mash fruit with a fork.
4. Add in 1tsp of raw sugar/agave/honey to sweeten (if you use coconut milk you can skip this step depending on your taste) mix it all up and stick it in the freezer.
5. Check your mug about every 15-20 minutes and stir until desired texture is acheived.
I hope this makes for a yummy, healthy treat! Enjoy!
