Fit Weekend Egg Scramble

I am always up for a fit & yummy breakfast, how about you?

A lot of times on the weekend I get up and stumble around in the kitchen searching for something fulfilling to eat before I go for a run. This isn't always a bad thing, but realistically usually ends up more like simple coffee and peanut butter toast.

I have started experimenting with whatever I have in my fridge and fortunately I haven't been disappointed yet.

This dish is super yummy, easy, and best of all healthy!

Ingredients:

1 link Chicken Sausage*

1 handful Baby Tomatoes (sliced)

1/4 C Red Onion (chopped)

1/4 C Zucchini (chopped)

2 Egg Whites

1 Egg

1/2 Tbsp. Olive Oil

Dash of pepper

Directions:

1. Prepare your veggies and throw in your skillet with the olive oil. Take your sausage and slice into portions according to your liking, I made mine bite sized.

2. Sauté until veggies are cooked through, add eggs and pepper.

3. Cook eggs according to your taste and Voila! Enjoy!

Can't get any easier than that! This is also a great "breakfast for dinner" idea too!

I always add in some COLOR to give me a pep in the morning, here is my current fruit bowl. Don't all these fruits look so delish!
