It's Been Too Long! So Here is my Fave Summer Lunch Just Because I Missed Y'all...

Grrrr... I can't believe I haven’t posted in 3 weeks, but I'm happy to say that my hiatus is over. I definitely got overwhelmed and things got hectic surrounding the filming of my episode of American Ninja Warrior and with that came a back load at work and just life in general. I think I've finally recouped. Does that ever happen to you? Life gets so bogged up and it takes what feels like forever to get back in your happy shoes!?
For those of you have asked or wondered, I am as real as it gets, I work a full time job in the corporate world, travel for work, and have plenty of obligations. With that kept in mind, I still "make time" to be fit and healthy, especially when I am on the go.
If you are on the go constantly or work in an office like me and find it hard to eat or find healthy options, this lunch is for you. Did I also say how simple and portable it is!?!
My FAVORITE go to lunch, which I could probably eat every day, is a big salad with lots of veggies, protein and some fruit. Below is my “Fiesta Chicken Summer Salad"

This is a salad that I throw together in the comfort of my own kitchen, of course Whole Foods helps.
In a large re-usable container I throw in:
3 Handfuls of Spinach and Kale Mix
1 Handful of small tomatoes
1 Handful of cucumbers
4 oz Whole Foods Lime & Cilantro marinated chicken breast (this is not pre-cooked! I cook it in the oven or on the grill. I find by the meat counter)
1 Handful blueberries
2 Tbsp Pomegranate seeds
In a small container I pour 2 Tbsp of one of the following dressings:
Brianna's Real French Vinaigrette
Girard's Champagne Dressing

Up close and personal!
Guys, this is so easy, and healthy. A no excuses kind of lunch. A lot of days, I literally open the fridge and just throw in a bunch of random ingredients I have that need to be eaten. It's a great way to be creative and healthy at the same time!!!
Now that I have my life back to normal I will be getting a lot more yummy goodness brought your way, as well as posting some of my favorite gym exercises.
