Banana Bread Mug Cake

What is better than a cake in a MUG...? Even better, a banana cake in a mug that takes only 2 minutes to cook.... I win!
I was roaming through my kitchen the other day looking for something sweet when I noticed an overly ripe banana. I thought, what can I do with this besides throw it away...MUG CAKE! Mug cakes are sweet, simple, and to the point.
Ingredients:(Dairy Free y'all)
3 Tbsp All Purpose Flour
1 Tbsp Almond Milk
Dash of Almond or Vanilla extract
1/2 Tbsp Coconut oil
1/2 Tsp Baking Powder
3 Tbsp Brown Sugar
1 Egg
1 Ripe banana

Directions:
1. GET OUT YOUR FAVORITE MUG! Take your coconut oil and melt in the micro for a few seconds until melted (this will help mash your nana). Once it's melted, break your ripe banana into chunks into the mug and start mashing and stirring. When it's ready, it will look like this...

2. Add in your dry ingredients.

3. Add in your brown sugar, milk, egg, and vanilla. Mix well.

4. *make sure to take that fork out of your mug :-)
5. Throw in the microwave for 1 min., assess your cake (it will rise in the microwave so keep an eye out, you can stop/start the microwave as much as you need), and cook an additional minute or two if you think it isn't ready!

It should look like the picture above when it's ready. Add some Artic Zero Vanilla (if you're being really good, like me) and VOILA! Enjoy!
