One Pan Fall Dinner

Hello, again....
Man, do I keep leaving you guys hanging or what! I haven’t posted in forever, who knew blogging was so tough to maintain?!!?!!
So much has gone on in the last six months, I can barely keep up with it myself. Let's see... vacationing, engagement, wedding planning, birthday parties, holidays, more wedding stuff, American Ninja Warrior: Season 8, more holidays, moving into a new house, building a second house, traveling, oh and I have a full time job too! Get my drift.... it's exhausting! Does anyone else lead a hectic life?
Speaking of "hectic lives", I am always on the lookout for anything that can simplify my day, the crockpot is one of those simplifiers and so are one pan meals. Just throw it all together and plop it in the oven while you pour yourself a big glass of wine!
I absolutely love this recipe, not only is it so "Fall", but it's delicious and easy! I hope you love it too!
Ingredients:
6-9 Bone in Chicken Leg/Thighs
4 Tbsp olive oil, divided
1 1/2 Tbsp red wine vinegar
3 cloves garlic, minced
1 Tbsp each minced fresh thyme, sage and rosemary
Salt and freshly ground black pepper
1 large sweet potato (peeled), chopped into cubes
1 lb Brussels sprouts, sliced into halves
2 apples, cored and sliced into half moons
2 shallot bulbs, peeled and sliced
1. Turn the oven on to 425

2. Mix 1/2 of your oil, red wine vinegar, garlic, herbs, and salt and pepper together in a bowl. Add in the chicken and toss.

3. Cut up your sweet potato, brussel sprouts, apples, and shallots. Place in baking dish and toss with the remaining olive oil.
4. Pour chicken mixture over the veggies. Pop in the oven for 30 minutes. Voila!
