Nutty Oatmeal Bars

What's better than homemade?
I whipped up these snack bars in less than 5 minutes (minus the setting time) and enjoy one every day. I was wandering around my kitchen, hungry, when I realized I had a ton of dried fruit that was going to waste. I decided to throw it all in and tame my tummy because I LOVE snack bars and didn't want to leave the house. These are great summer time snacks for the kids, on the go snacks for your road trips or vacations, and the perfect midday meal prep snack! I used the dried fruit I had laying around but you could use any kind. I hope you enjoy these as much as I do!
Ingredients:
1 Cup Oatmeal
2 Handfuls of Raw Almonds or Chopped Almonds
3-4 Tbsp Peanut or Almond Butter
Handful Chopped Dried Apricots
Handful Dried Cranberries
1 Tbsp Flax Seed
1 To-go container with lid
Wax Paper
Directions:
Grab 2 handfuls of raw almonds and chop in food processor (if already chopped skip this step)
Dice apricots into small pieces
In medium bowl mix together all dry ingredients and slowly mix in peanut butter while mixing.
After all your ingredients are mixed well and not runny or dry, pack tightly into a square dish (see picture). Cover with foil.
Place into fridge to set for 3-4 hours.
Take out of fridge and slice into bars. Wrap each one in wax paper and place in to-go container with lid. This recipe makes 5 bars. Will stay fresh in fridge for 1 week.
