Fit Chicken Rollatini: His + Hers

If you know me, then you know that I'm always on the lookout for new healthy recipes and that I love trying out all the new health crazes. My other half....not so much...more like always on the lookout for pizza and cookies, yumm!
So with that being said, this is the beginning of my "His+Hers" posts. These are delish dishes that I have tailored to suit my healthy needs and my hunny's desire to be not so healthy. So if you're cooking for someone else too, these two variations should be a winner for all tastes!
Let's talk Italian. Who doesn't love opening a crisp bottle of Pinot Grigio and cooking a delicious hearty Italian dinner while humming along to some Frank Sinatra!?! Sounds great, right?
Face it, when we think Italian all we see is CARBS in bright blinding flashing letters . Most Italian dishes, unfortunaley, are comprised of the one and only terrifying carb, pasta. People swear to me that they can gain weight just by looking at carbs. Well, Italian doesn't have to be so terrifying, this is my spin on pasta-less Italian goodness!
Health tip #1, I stay away from those fun things called carbs after lunch time. This will ensure that no matter how late you eat, your body isn't sitting on all those carbs overnight. If you eat them at lunch time instead (depending on your goals) this will allow those carbs to be converted into enegry long before you hit the sack!
CHICKEN ROLLATINI: His + Hers
Ingredients:
1 Bunch fresh organic spinach
4 Cloves fresh garlic (minced)
1 lb. Mild ground Italian Sausage
1 Container of sliced button mushrooms
2 lbs Chicken Cutlets or Chicken breast cut in halves
1 Can of low sodium diced tomatoes
2 C Marsala Wine
2 Tbsp Butter
Shredded Monzerella Cheese
Olive Oil
Pepper
Toothpicks
Directions:
1. Pound chicken cutlets with a tenderizer or knife handle end to thin them out.
2. Set oven at 400 degrees.
3. Sautee sausage until cooked thoroughly, if an abundance of grease, drain out.

4. Rinse off spinach and chop into small chunks, add this to your sausage with the minced garlic. Season with pepper and sautee until your spinach is wilted.

5. Give your mixture a couple of mintues to cook off so that it is not too hot to the touch. Lay out your chicken and place a spoonful of your sausage mixture on top. Roll the chicken over in half, I find this easier than trying to roll it. Use 1-2 toothpicks to keep closed.
"His" - before adding the sausage mixture to your chicken lay down some shredded monzerella cheese first.
6. Place the chicken rolls in a lightly oiled glass dish and place in the oven for 20-25 minutes.

7. "His" Sauce- When your 20 minute timer goes off, add 10 minutes more and "Her" sauce, then sautee your mushrooms with olive oil over meduim heat until cooked. Add in marsala wine and butter, season with pepper and let simmer.

"Her" Sauce- pour the can of diced tomatoes on "her" portion and stick back in the oven for the additional 10 minutes.

* Note that I did not use the tomatoes in the above picture, I chose not to have them this time.
8. Take your chicken from the dish and place on your plate, add a good amount of "His" sauce to "His" portion after you have placed on his plate. Voila!!
